Kindred Spirits- the journey


"My name is Naomi. I reside in the Boston area with my three daughters. My daughters are all involved in sports with the exception of my 7 year old who takes three dance classes a week! My husband is in sales and flies all around the world quite a bit which leaves me to be both Mum and Dad quite often. I don't mind, but I surely miss him when he's gone. Between sporting events, dance classes, and the perils of a young teenager, I rarely take a moment for myself.
One thing I really enjoy is the hour before school lets out. It's the time of the day where I do a little something for me. What do I do? I usually pour myself a cup of tea and enjoy a piece of home baked English shortbread. It's one of my favorite recipes from back home in England and it makes quite a tasty treat.
Now that we live in the United States, I don't get much of a chance to go back home because of the crazy schedules of my three girls. But next summer, we are planning a trip home and will be sure to bring some shortbread back to my parents so my mother knows I haven't forgotten how to make it!"

Here is the recipe for English shortbread
Ingredients:
1 cup of Butter
3 cups plain Flour
1 Egg
½ cup Sugar
1 tsp Baking powder
Makes about 45 to 50 shortbread squares - store any excess in an old biscuit tin.
Method :
1.
Cream together the butter and sugar, with a wooden spoon, until the mixture is light and fluffy.
2. Beat in the egg.
3. Sift together the flour and baking powder and add to the creamed butter along with the remaining ingredients. Still well with your wooden spoon until all are blended together. Again you should end up with a doughy mixture.
4. Roll out the dough on a floured surface until it makes a square about 14" on each side. Cut this into lots of 2" squares.
5. Put the little squares about 2" apart on to a baking sheet and prick each square a number of times with a fork. (The lines of 'fork holes' on top of the completed biscuit is a 'trademark' of real gingerbread). Bake in a preheated oven 325°F (gas mark 3) (160°C) for about 10 - 12 minutes or until lightly browned.
6. Place onto a rack to cool.
